The Mrs. got the nerve to bake

Finding the nerve to write about food experiments I’ve done over the past few weeks when I’m not feeling hungry is challenging. That is, until I read comments from my followers on my last post that sparked some ideas.

I looked at photos of the meals that were particularly yummy in the past few weeks. That gave me ideas to share those photos. Mr. is a great cook and spoils me, yes he does!

But there’s more! You’re in for an extra special treat, ‘cuz, not only did Mr. cook (he does EVERY day), but I baked. See that tiny bun on the bowl, yeah, I actually baked it! I’ll need to try that recipe again when the weather isn’t -36 below, it was hard for the yeast to get warm enough in the bowl to help the dough rise. We had several days of bitter cold like this…

Back to the warm buns, let’s just say, the texture of the bread isn’t the same as flour bread made with sugar (which we don’t eat), but they were good and lasted 3 meals, same as the stew did. Instead of potatoes, the stew contains radishes for them. They have the taste and texture of potatoes and are low carb!

I’ve been busy at tax prep, so the baking was a nice distraction. I’ve been fine, just fine. Like Eleanor Oliphant fine, only better. Have you read that book? It’s okay, different. I was glad to read it to the end and be done with it yesterday.

After finally getting to reply to comments on my previous post, I’d like to share a heartfelt thanks to Cindi. She pointed out that I answered incorrectly re Vitamin C. Here’s the difference – don’t buy the crappy versions that have fillers and SUGAR in multiple forms in them.

The 3rd ingredient is all you need!

Also, I am thankful Rebecca mentioned cheese in her comments. We live in Wisconsin, home of the Cheeseheads! We wouldn’t enjoy life without our cheese. We love cheese so we do eat it regularly. Now, I know, I know, some people feel that it is bad for you, and there’s probably some study that you should never eat it, but for us, it works and we carefully select versions that aren’t processed to the point of plastic covered slices of weirdness.

Drumroll please…

As I share with you my other baking experiment I was nervous to try, but am glad I did.

For the longest time, since my 2nd child was born (almost 26 years ago), I had been allergic to chocolate after I overdosed myself during that pregnancy. So I thought so, anyhow – it would give me horrible headaches. I’ve happily lived without chocolate.

But, Mr. likes chocolate. I decided to try baking brownies as a Valentine’s treat for him. And you know what, the organic cacao powder doesn’t give me a headache! I can only eat one of these per setting – they are surprisingly good.

The first batch tasted like creamy fudge. The second batch was more like a brownie that melts in your mouth. I think the third batch will be perfect.

  1. A very tasty post, Shelley! I have the same person do my taxes each year now for many years. You are so blessed that Mr. makes you such delicious food, he kinda loves you, eh? That bowl of stew looks incredibly delicious, I miss having a really good home cooked meal. I hope your temps will trend upward so you can get some more seasonal weather. Stay warm! 😋😊

    1. Thanks, John! I hired myself to do the prep work and I suck at it every year. Our tax accountant does the heavy lifting once I get the stuff to her.
      Yes, that stew is delicious, Mr. must love me lots to make such great food. Maybe you could make the recipe sometime (it’s really easy) and see if you like the radishes instead of potatoes. 😉
      It is 17 above today and we walked outside in it, it felt great!! We’re looking forward to spring, that’s for sure.

  2. Oh my, that all looks so yummy – well, except for that outside temperature. It’s nice having someone cook for you, but it’s nice to bake for him in exchange. Good balance.

    Me and TurboTax have been working on our taxes. Progress is being made. Good luck on all fronts, especially the weather.

    1. Thanks, Dan. Yes, Mr. and I have a nice working balance – while he cooks more than I do, I think he’d gladly cook over the tax prep.

      One of these years I’ll go back to TurboTax, it’s way cheaper than paying an accountant. 😉

      1. I used to do my taxes in Excel. I moved to TurboTax, but it’s a love/hate relationship. Perhaps it’s just everything associated with taxes get tarred with that stick.

        1. We’ve used them all – currently use Quicken for record keeping and then let the accountant do the heavy lifting. Taxes are a pain no matter what! 😉

  4. Hmm – now you are a baker too? I like brownies but never make any baked treats for myself. (Yes, the Windows 10 laptop is still on the stove and a pain to move it – move it where? No counter space and the crockpot I bought last Fall encroaches bigtime on my counter space.) I have given up sweets for Lent, though I don’t eat many sweets now. If I don’t buy them, they aren’t around and I must taste the squirrels’ Nutter Butters before handing them out … that’s a good excuse anyway. 🙂

    1. I’ve always enjoyed baking, the low carb approach is different in a good way. You do have to measure very carefully, though.
      LOL – Maybe Bill G could write software that cooks on laptops?
      Our priest used to say that Sundays during Lent were ‘free’ days so you can treat yourself that day of the week.
      Your photos with the squirrels and the Nutter Butters were delightful to see. I hope you walked off the cookies you ate. The weather should be a bit warmer this coming week for you. It is here.

Yes, Bill Gates should do that for me – he is solving COVID crises right now instead of software issues. 🙂 One day I will learn to bake … I’d love to learn to bake bread, but maybe it is not a smart idea to do that. I did walk off the cookies and no more treats for awhile. That is a different and nice way of looking at Lent. My mom and I always gave up sweets and it was sometimes a problem since her birthday was Valentine’s Day and fell during Lent or my birthday was sometimes around Easter. We had to celebrate before or after. 🙂 We had the mid-40s today and like that all week and weekend. So that is a treat after the monotony of the horrible cold and snow every day!

  5. Yummy meals. Those buns look delectable! Eleanor Oliphant was a book that I was reading in my book club but wasn’t able to finish. I might pick it back up later. Did you enjoy it?

    1. Thank you, Theresa. The buns were lookers, the taste was good, texture was more sponge-like. I need to give the recipe another try to see if I can make them better.
      Eleanor Oliphant is an interesting read, I didn’t love it, and I didn’t hate it. It did keep my interest though, and I liked how it ended. I’d encourage you to finish it to see for yourself. 😉

    1. I could see you enjoying Eleanor’s quirkiness – she was entertaining. I had a hard time liking her at first, but she grew on me.
      Yes, brownies without frosting are yummy!
      I haven’t found anyone thrilled with taxes – I handed my initial efforts off to the accountant to work the rest of the magic. I’ll finish up the process by writing checks to pay what we owe. It’s such a fun time of year! NOT! 😉

  7. That was a fun Stream of Consciousness! Your brownies look so yummy… do you deliver? I enjoyed Eleanor Oliphant and recommended it to my book club where it got mixed reviews. I guess it’s one of those books you either get or not. I appreciated her quirkiness.

    1. You’re welcome. We just finished off our third batch of the brownines and neither one of us gained any weight. I’m going to make more today! 😉
